Egg Plant Recipe (Nasubi)

I'm harvesting some egg plant at the moment from the grafted varieties mentioned in previous posts. My wife called her mother in Japan and ask her how to cook egg plant and here's what she said........
Place egg plant on an open flame turning periodically,takes about 5min. The flesh of the egg plant will cook nicely in it's skin.


Peel skin with tongs.




Place in fridge and let cool. Then just top it with grated ginger and dried fish flakes. Very cool and soothing for a hot night in Cairns!

as eggplants are good tropical yummy food !

We've got 6 different types of eggplant growing at the moment, and this sounds like an interesting way to try them. ( I was running out of ideas)
